Have the short rib rack cut into 8 pieces so it is easy to work with
This is how I do my short ribs:
Season meat with salt, pepper, and garlic powder.
Sear on all sides in a skillet using olive oil until golden brown.
Remove meat from heat and put aside.
In the same pan sear a quartered white onion on all sides and place in the crock pot
Add the following to the crock pot:
3/4 a bottle of any red wine
1/4 bottle into wine glass to drink 😉
1/4 cup balsamic vinegar
2 tablespoons tomato paste
Salt, pepper, garlic for taste
And the short ribs
Stir and then cook on high for 6 hours
I typically serve these over red bliss mashed potatoes. Don’t be afraid to use the liquid in the crock pot as a gravy for this meal.
To make these mashed potatoes:
I quarter the red bliss potatoes. You do not have to peel them.
Add them to a pot and add Half and half until the tips of the top layer of potatoes are slightly exposed ( about a half inch out of liquid). Add about two tablespoons of water. Cook on medium heat ( just slightly simmering). This will take approximately 35 mins to get fork tender. Once tender mash the potatoes directly in the pot without straining. The mixture will thicken as it cools. Add whatever you like for seasoning on your potatoes at this point. I will use just the basics again here (salt, pepper, garlic, maybe some thyme or rosemary to spice it up).
