Sweet Italian Chicken Sausage Stuffed Zucchini


1# Alpine’s Sweet Italian Chicken Sausage Meat

4 Whole Medium Sized Zucchini

3 Whole Tomatoes

1 cup Shredded Asiago Cheese

15 Crackers of choice

1teaspoon Olive Oil

1 table spoon Black Pepper.

Step 1

Preheat oven to 350F

Step 2

Heat a large cast-iron skillet over high heat. Add oil to the pan.  Add chicken sausage meat to pan. Brown sausage meat on all sides; Drop heat to medium and continue to cook for 5 minutes.

Step 3

Cut the Zucchini Directly in half canoe style. Using a spoon remove the meat of the zucchini and place it into cast-iron pan with 3 whole tomatoes cut into ½ inch cubes. Place zucchini shells aside on an oven safe roasting pan and sprinkle with black pepper.

Step 4

Cook down the ingredients in the cast iron pan until the vegetables become tender. Add crumbled crackers and ½ cup of cheese. (approximately 8 minutes)

Step 5

Stir the ingredients. Continue to cook until all cheese is melted.

(approximately 5 more minutes)

Step 6

 Remove cast iron pan from heat and using a spoon carefully stuff Zucchini shells with the chicken sausage stuffing.

Step 7

Bake at 350F for 30 minutes.
