Rum Infused Australian Wagyu Ribeye BMS 6-7

For these steaks we took BMS 6-7 Australian wagyu ribeyes and marinated the loin in rum for 3 days. After that, we took the loin out, wrapped it in cheesecloth and soaked it in rum again. We let the loin sit for a week in our dry age room then portioned it into steaks, creating a tender cut with hints of rum flavor.
