These boneless USDA Prime Ribeyes were coated in allspice and then vacuum sealed in rum to soak for 48 hours and infuse the flavor. After that, we wrapped the loin in cheesecloth for 2 weeks where it was soaked in rum again. After those 2 weeks, it was unwrapped and left to dry age for the remainder of the 40 days.
With subtle tastes of allspice and rum, they amplify the natural flavors of the USDA Prime ribeye and take it up another notch.
