Amazing tenderloin, perfectly trimmed

Alpine Butcher's tenderloin roasts are the no-brainer of holiday prep - this was the 3rd or 4th time we've done their Prime Tenderloin roast. Things to know: (1) they come in at/above weight, (2) they're perfectly trimmed, no waste here at all!, and (3) they're perfectly tied. Customer for life. You won't be disappointed!

One exception

The thickness from one end to the other was varied enough I cut the tenderloin in half so not to over cook the smaller end. It was very tender and it turned out perfectly.
