Gift for my daughter’s family. Son in law prepared brisket on his Green Egg and it was superb.
I was surprised that he had to do as much fat trimming as he did. There was at least a pound of solid fat in one block on the outside of the brisket.
He didn’t think that unusual but I don’t understand the process of meat cutting bought from a butcher. It isn’t like that at the grocery.

We have been making tenderloin for Christmas Eve for almost three decades. This was by far the most tender, well-trimmed and tied, and flavorful ever. I cooked it sous vide at 131 degrees for 3 hours, chilled it for 5 minutes in ice bath, then seared on hot plate over grill with garlic butter basting. Melts in your mouth.

I ordered online since I couldn't make the trip out due to the hectic nature of the Christmas season. My order shipped quickly and safely. Next time I will probably check out the shop in person.

Cooked this up for Christmas dinner after dry brining it for a day. I did the reverse sear method and it came out absolutely fantastic. It was far better quality that the rib roasts I have gotten from the supermarket in years past. Incredible hunk of meat.

It was incredibly buttery, rich, and flavorful, melting away in my mouth just as I had anticipated.

This tenderloin is one of the best I’ve ever had. The beefy taste and the extreme tenderness makes this second to none! Do yourself a favor and try them. You won’t regret it!!

Tried Australian Wagyu from other shop and was not impressed, ordered one from this website and it is one of the best steaks I’ve had, definitely recommend the striploin especially a thicker cut
